I’ve been wanting to eat healthier, get in better shape etc. and decided to work towards cutting out meat from my diet. This was my first official vegetarian meal prep, a chickpea curry with cauliflower, peas, spinach and carrots.

It turned out sooo good and I’m looking for other ideas for vegetarian curries, but not confident enough to get into the more…specialized?…Stuff, just looking for ideas! I am very skilled in the kitchen (almost a decade as a professional chef, so technique is not a problem, it is more so just needing ideas etc.

    For me, a big game changer was brining. When I cut cauliflower or broccoli, instead of washing, I make a salt bath (warm water and salt, close to “the ocean” level of salt) and let them sit 10-15 minutes after cutting.

    It makes them taste great, roast up better and stay crunchy while cooked.
