I think it's a Classic II (with a felt gasket?) Just looking for guidance or reassurance on assembly. Also question: if I smoke a turkey in here, could/would I put a drip pan on top of that stone?

No air lift and no front latch, so you have a classic 1. Definitely use a drip pan for smoking a turkey!

Get rid of that ash catcher and just get a kick ash basket works 100% better that original you will have to eventually disassemble the entire thing to clean it

I have same mode. You’re going to love it. Dont worry about the felt if it’s not leaking smoke.

Definitely get a charcoal basket so that maintenance becomes much easier.

Step 1 assemble the joe. Step 2 dump a big ole pile of coal Step 3 ignite coal, open all vents, closed lid. Step 4 let it rip, come back tomorrow.
Now you have a clean joe to work with.
