I had ground bison, and i wasnt ready for the strong flavor. after cooking it I had it in a to go box, closed. I kept lookong around the car like what is that BO smell? is it my shirt?

no it was the cooked ground bison.

i will say, perhaps I am wrong for being so put off bc this is what meat should taste like. it’s not like the other animals that have had thousands of years of human intervention.

next time, maybe use lots of seasonings. rosemary. things to distract from the intensity.

they didnt mention the taste of bison in social studies in elementary school.

bison can crossbreed, so I’m excited for various combinations like Wagyu or Scottish longhorn.

    You got bad meat my friend. Bison when done well is not much different than beef. Think about it like fish. When it’s not properly prepared or cooked it tastes and smells like fish. But yet when properly done it is very enjoyable

    That is weird. I have eaten quite a bit of Buffalo, and it’s always been excellent.

    There’s a local bison producer near me and it’s not funky at all – less fatty and milder even than beef.

    I’ve never had any funk or strong flavor associated with bison. Had a ton of it over the course of my life, it usually tastes like a “cleaner” version of beef. “intense” is not what I’d call any that I’ve had, and I’ve had it in steaks, burgers, chili (great if you love chili cheese fries or chili dogs that feel less heavy/greasy), pasta, etc.

    First time I had bison steak was at Yellowstone, of all places. There is a slight odor difference from beef – and a slight taste difference> Maybe that was in my head. Tasted like a more beefy flavored NY steak. I found it quite good. For comparison, my usual go to steak is ribeye or filet mignon.

    Now the really odd one was the time I tried whale meat. Cooked whale meat (prepared in tempura batter) tastes and has a texture a lot like beef – with a hint of tuna steak in the flavor. It’s good, but I felt guilty after eating it.

    Then there’s horse sashimi in Japan, and cooked Milanese style in Italy… Beef like, but had a taste that reminded me of venison. I found it too tough for my liking.

    Alligator, deer, and bear? Only had it as jerky. Only the deer was impressive. The others, not so much.

    None of the ground bison I routinely buy at Costco has ever had a “bad” odor or taste.

  7. Maybe some folks have a gene that doesn’t like it? Like with people that taste soapy cilantro. Or it was spoiled. Bison tastes like beef with a slight tang to me. Weaker tang than lamb, which I fucking love.

    You must have gotten some bad. It’s a very lean and mildly flavored meat, much like elk. Shouldn’t smell funky at all

    Okay so I know a lot of people here are saying bison is quite mild and while that is true for most of the bison that most people eat, it’s not always true. Pretty much all of the bison that you can buy from a store is essentially a farmed bison. It ate feed and lived on a ranch it’s whole life. But you can hunt wild bison in some places and those bison can have a very strong gamey flavor. My grandparents used to go hunt bison every few years in South Dakota and some of them were so strongly flavored that they weren’t even that good for jerky or sausage.

    No idea if this applies to your bison but I thought it was worth mentioning.

    Grew up on a buffalo ranch, stay there till I was 18.. Jasmine we had regular beef and bison and most times really couldn’t tell the difference other than the buffalo had a lot less fat.. like other people are saying you got something bad..

    it eas probably cooked on a flat top that doesnt get regularly cleaned. That rancid oil smell will definitely stank up a car for a couple days. Source: 20 year cook with questionable work mates

    Op all I could think to do is marinate it with something that would pull out that off putting smell your finding maybe look at a couple different preparation styles on the internet someone somewhere has had that experience and can show how to make it better

  16. I’ve had bison burgers a lot and they don’t taste or smell that much different than ground beef or hamburgers.

    I’ve had bison on many occasions. I could barely tell the difference from beef and most of those times I couldn’t at all tell the difference.

    It shouldn’t taste much different than grassfed beef, sounds like you got some that wasn’t too good.
    Moose meat is something worth trying.

    I’ve never had bison taste all that much different than beef, much less stink my car up like BO.

    I’ll share an anecdote of mine that I’m thinking is similar to what you just experienced. About 10 years back I went to a national chain steak house. I was not super well versed with buying steaks on my own I was still fairly young. I got a medium steak with sautéed mushrooms and blue cheese crumbles. Came out, took a bite-Nope. Scraped all the blue cheese off. Took another bite and it was still super funky.

    EDIT to add; I actually love blue cheese this was beyond that kind of funk.

    I had a work colleague of mine who had gone to culinary school before changing career paths. The next day I was discussing it with him and he said it wasn’t the blue cheese, it was the meat. It was bad. When it starts turning that funky, cheesy, moldy smell/taste is it spoiled.
