Looks good. Doesn’t look patchy to me so id say its marbling and not steatosis. You’ll have to let us know after you try it

That’s how all flat iron steak look like. I buy it all the time because it is a cheap cut. I pay $10.99 in my grocery store in NC.

Flat Iron is my favorite cut. I’m not a fan of sprouts meat and yours is a big reason as to why. Grass-fed? Mmm no. This is grain-fed beef, probably finished so they could say “100% grass fed”. This marbling is consistent to not being grass finished. I don’t even think this is Angus. I eat angus flat iron steak 3 times a week. I had prime angus tenderloin and flat iron today.

Here’s another grass finished flat iron from the ranch I work at. It IS possible for a cow to get this type of fat. Don’t listen to those that say otherwise. I literally just pulled this out of my personal freezer, just to take this pic. I also get to pick my stuff before I sell it. lol.
