Zeppole is an Italian sweet treat made by deep frying dough and then topping with a generous amount of powdered sugar. The hot dough melts the sugar making for a sensational treat. Nonna would fry up a batch or two every New Year’s Eve. It was her special way to ring in the new year. These delicious treats can be made for any occasion, so enjoy anytime!
Ingredients:

1 cup water
1 teaspoons sugar
1 package self rising yeast
2 cups all purpose flour
2 eggs whisked
1 teaspoon salt
2 tablespoon olive oil
Powdered sugar to top the Zeppole

Steps:

1. In a bowl, mix the water and yeast, wait a few minutes, and let foam.

2. Add the flour , make a well and drop in the eggs and sugar. Start working the dough. Add the olive oil to mixture. Keep kneading the dough. If dough is too dry add more water 1 teaspoon at a time if too wet rub with more flour.

3. Form ball with dough, put in bowl, cover, and let rise for several hours.

4. Fill the skillet with oil , at least 3-4 inches and let get hot.

5. Take a serving spoon full of dough and with a separate spoon push the dough off the serving spoon into the hot oil.

6. Do not overcrowd the pot. Cook till golden brown approximately 4 minutes on each side.

7. Remove from oil and drain on paper towel.

8. Sprinkle with powdered sugar and serve hot.
