This loaf was a gift so I don’t have a crumb shot unfortunately 🫠

This is 65% hydration bread and I can tell you open crumb is definitely achievable even at lower hydrations😁

Recipe:
325g water
120g starter
10g salt
500g flour

Mix everything but salt and knead a couple of minutes. Rest for 15-30 minutes. Add salt and knead until smooth. Perform 3-4 sets of coil folds 30-45 minutes apart. Finish bulk fermentation when jiggly and easily separating from the bowl. Shape and into the fridge overnight. Bake at 250C for 30 minutes, covered, in preheated dutch oven and 5 minutes, uncovered, at 230C.

    Looks great, where did you buy your silikon baking sling? Most I have seen had a max of 230 degrees

    I love the idea of scoring when it’s slightly baked – no matter how sharp my blade, I can’t pull it through without deflating the loaf.

  7. I’d also add that it helps extra mucho if the dough is a little over fermented. If you score it before like you normally do it’ll fall flat much easier than if you score after seven minutes like OP.

    If I may give you an advice, it’s often not a good idea to touch food with your oven gloves.

    Also, you might want to bake your loaf longer if you haven’t tried yet.

    Oh and if you want an ear, try to cut your loaf with an angle. Your blade should be more horizontal, and less vertical… If that makes sense.
