
When I make the pork, I separate it into tuberware and I throw some juices on top. Well most of that settles at the bottom. As I scoop out enough for 2 tacos while prepping my lunch I try to include the hardened fat/juice. Today I reached the end of the one container so it had all of the excess fat.
I also had to made more salsa Rojas last night and it's always different as Im still trying to dial that in. I found one recommendation to simmer it on the stove a bit to reduce and it was such a better, deeper flavor. This batch was more watery that I would have liked so I'd like to thicken it up a bit for next time.
