Did You Know? Korean spinach, or Sigeumchi Namul, is one of the most traditional Korean side dishes served with almost every Korean meal. Namul dishes have been around for centuries in Korea.

Ingredients:

  • Fresh spinach
  • 3 green onions, minced
  • 2 cloves garlic, crushed in a mortar and pestle
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp sesame seeds

Directions:

  1. Mince the green onions and crush the garlic using a mortar and pestle.
  2. In a bowl, combine the soy sauce, sesame oil, sesame seeds, garlic, and green onions. Mix well.
  3. Bring a pot of water to a boil and cook the spinach.
  4. Transfer the spinach to an ice bath to stop the cooking and keep the color.
  5. Squeeze out excess water from the spinach, then add it to the bowl and mix thoroughly with the dressing.

    Maybe add a unit of measurement for the spinach…? Especially since it wilts so much after cooking
