I've never had Quinoa before so I'm starting slow. I added Bulgar Quinoa to Bell peppers, cucumber, onion, goat feta and a table spoon of olive oil. Added a small amount of chicken and pumpkin seeds to the side. I actually like it. Im going to miss pasta but this is making me less nervous.

    And You don’t have to give up pasta to be on the diet! Stick to whole wheat, ancient grain, or legume based pasta! [Here’s](https://www.eatingwell.com/healthy-pasta-recipes-for-the-mediterranean-diet-11701909) some additional inspiration for dishes too!

    Also – pearl couscous is considered med. I love [this](https://nocrumbsleft.net/2023/03/22/pasta-primavera-recipe/) dish, but use pearl couscous in place of the pasta.

    I have been eating red lentil pasta. Not exactly the same as normal pasta but its pretty good
