I regularly see a disparity between the thermometer on my baby (big green egg XL) and my electronic that I use to monitor inside the house. Which should I trust?

I use a therm pro with my egg. I trust the therm pro over the egg’s thermometer.

Water boils at 212 F. You can test your digital thermometer and your BGE thermometer by “sticking the tip” of the thermometer in boiling water. If it hits 212 F then you know it is accurate. If not, then you need to calibrate. There are videos on the YouTubes on how to calibrate your BGE thermometer.

Did you calibrate them all prior? Put them in some boiling water to confirm they read reasonably accurately and similarly (the BGE thermometer comes out easily).

There is disparity between various places in the grill. Clip the electronic probe to the analog inside the dome and compare.

The BGE one is reading dome temp, the Therm Pro is reading grate temp (as you most likely have the probe in the grate clip). The grate will always be hotter than the dome as it is closer to the coals. Grate temp is closer to your meat, so that would be a more accurate temp to go by, though I generally use the dome temp to monitor grill temp and one probe for direct meat temp ( when meat temp is critical) because it is simpler.

My BGE dome thermometer was off by about 50°, so I did the boiling water calibration. Although keep in mind that unless you’re measuring at the same spot, you will have different temperatures at the dome vs grate level.
