I normally put the mozzarella in the freezer for half an hour, then grate it before topping on my pizzas.

Doing this produces a great melt when baking without the cheese burning.

I buy the 2.3kg block on Amazon for £21.53 and cut it into 10 separate blocks for storage.

This pizza was baked at 280°C for 7 minutes on an oven baking steel.

    I concur on the Arla, it’s the best I’ve found. I use a lil mild cheddar (85/15ish) in conjunction for some extra sharpness. NY Style and selling 👊 I also don’t grate, I dice into very small cubes, which gives me a nice coverage and I can prep/store it better.

    I can confirm this is the best option outside of USA. What most consider the best low moisture mozzarella maker, Grande, will not export and I have used Arla for ny style in europe, asia, and ME with very good results.

    Do you think freezing it changes the texture at all? I’ve frozen chopped up pieces of a similar dry block mozz on part baked bases but it came out a bit weird in the oven

    I’ve been using the mozzarella slices and then grating those- that works really well. Gets away from the coating on the pre grated stuff. Not tried the arla cheese.

    Bro! If you have a Costco nearby you can get the exact same product between £9-£13. Cheapest I ever got it for was £9 one day.

    Agreed with you it is the best cheese I’ve come across in the UK for pizza. My only problem now is finding actually good pepperoni that cups and is thick. The supermarket stuff just isn’t doing it for me
