If you’re craving for some delicious, hearty, and big on flavor soup well this Tuscan white bean soup with Italian sausage will not disappoint you. It has some tender vegetables, a rich savory broth, baby spinach, and some herbs that will make a great soup to have for those winter day and nights. It will be one that you and your family will truly enjoy!
Ingredients:
1 lb. mild Italian sausage or chicken sausage
1 large yellow onion, diced ( about 1 12 cups )
3 celery ribs, washed and diced
2 cups carrots, washed and sliced
2 tsps. garlic, minced
1 Tbsp. tomato paste
1 tsp. Italian seasoning
12 tsp. crushed red pepper ( optional )
12 tsp. ground black pepper
2 bay leaves
1 tsp. dried thyme leaves
4 cups ( 32 oz. ) chicken broth
2 cans ( 15.5 oz. ) Great Northern beans, drained and rinsed
2 cups ( 60 oz. ) fresh baby spinach, washed
12 cup ( 119 g. ) heavy whipping cream
1 tsp. dried parsley leaves, or fresh parsley for garnish
Instructions:
To a large Dutch oven over medium-high heat, add sausage. Cook until the sausage is browned, and break up sausage with a hard silicon spoon or wooden spoon stirring occasionally.
Reduce heat to medium and add onions, celery, and carrots. Cook until onions, carrots have softened, about 3 to 5 minutes. Add garlic and cook for 1 more minute.
Next, add tomato paste, Italian seasoning, crushed red pepper, black pepper, bay leaves and thyme, stir to combined. Add chicken broth and beans. Keep the heat on medium and bring to a simmer. Continue to simmer for 6 to 7 minutes, or until the celery and carrots are tender.
Add heavy whipping cream and spinach. Stir until combined. Continue to cook until the spinach is wilted, about 5 minutes. At this time you can add the parsley flakes or use fresh parsley as a garnish. It’s up to you. Serve warm and enjoy!
Hi everyone, it’s your girl Felicia. Hi Felicia. Today I will be making another great soup and this soup will be a tuskcin white bean soup with Italian sausage. M delicious. But before I get all my ingredients together, I’d like to share my shirt with you. And I got an apron while I was in Orlando at the Epcot International Food and Wine Festival 2025. And it’s still right on time. Well, let me get my apron on. And now I am ready to start on this fabulous, delicious soup. With no delays, let’s get to it. All right, I got my ingredients together. And these are the ingredients that you’ll be using in this delicious soup. And so right here, you know, we have the mild Italian sausage. And I’m going to take the casing off of it cuz we want it like ground. And maybe you can find it ground. Three celery stocks. You going to have your garlic. Make sure you mince it. I already got some set aside that’s ready to go. To tomato paste, you only going to use one tablespoon. crushed red peppers and I’ll share the amount down in the description box. Italian seasoning and we going to have our bay leaves only two the time dried thymes and your black pepper parsley flakes and it’s going to be used in garnish and you can also use fresh but I’m going to use the dried. You’re going to have a large onion. So, you want to have like 1 and 1/2 cup. And then you got your baby spinach. Also, you’re going to have chicken broth. You’re going to use two cups of this. Um, some heavy whipping cream or whipping cream. And it’s going to be like a half a cup. And also, you’re going to use two cans of the great northern beans. And like I say, I will have all the ingredients down in the description box and how much you use need to use. So, I’m going to go ahead on and dice up my onions and get my Italian sauces together and chop up my celery. And make sure you wash your spinach and wash your vegetables. Well, it may be the carrots and the celery. You want to make sure those are washed. All right, first thing is first. I got my Dutch oven here and I’m going to set my heat on medium high. And I got my sausage here. And I got one left. So, I’m going to take it out this casing. So, we do have new cooks out there. So, um I’m going to cut this open with my kitchen shears. And we’re going to pull that casing off. This casing is coming off. And set that aside. You going to throw that away. And I’m going to break these sausage up. And we want to cook it until it is well done. And this package came like with five links. And if you’re good to get the links, the Italian sausage without the casing, that is good. But if not, it is easy to remove. And like I say, I love soup. All different kinds of soup out there. And so this is the one that I will be making. And I also will be sharing with my neighbors because I love to share what I cook, especially when I make a lot. And so, we’re gonna let this cook and brown. And we’re going to break it up. You’re going to be stirring occasionally. Make sure you stir as you go. And once this sausage is done, I will get back and we will add our next ingredients. All right, I’m back and my sausage have brown. And how I broke my sausage up, I just took this hard silicone spoon and I just broke it up in pieces as it was cooking. And it seemed like I probably need to add some oil. But I didn’t add any oil. But if you want to add some, add a little bit of of olive oil or any oil that you have, but I did not have to add any. And so our next ingredients we have to add, we’re going to add in our onions. And I did have a little um from that large onion that I had. I had this much of that large onion left when I chopped it up to get like a cup and a half. But if you want to use that whole onion, you can. It’s up to you. Can’t go wrong with it. if you add more or less. Okay, now we’re going to add in our carrots. And that is two cups of carrots. And I’m adding my celery. And that was three celery stocks. So, we going to stir this around. And we’re going to cook this from anywhere from 3 to 5 minutes. when your carrots and your celery get a little tender. So, how long it will take is I don’t know exact time, but we want to get just a little, not too much, you know, like cook all the way done. But we going to let this, like I say, cook and let it soften some from 3 to 5 minutes, whatever it takes. And we will be back to add in our next ingredients. I had to come back. We got to adjust the heat from medium high to medium. See you soon. All right, I am back. Stir this around again. The vegetables are a little tender. Next, we’re going to add in our minced garlic. And I had two teaspoon of minced garlic. You can mince it yourself if you don’t buy it mince. That is the easy part. So I like to mince my own. We’re going to stir this around and we going to let this cook for one more minute. I am back to adding my other ingredients. Okay, we’re going to do the one tbsp of tomato paste. [Music] That’s it. Our Italian seasoning. And you’re going to need one teaspoon. Next is the crushed red pepper. And you can admit it if you don’t want any red pepper, but we’re going to just add a half a teaspoon. It’s not a m lot. Next is black pepper. And we’re going to add a half a teaspoon of ground black pepper. And the two bay leaves. Got that? And our thyme. And we’re going to add in one teaspoon of dried thyme leaves. Then we’re going to add in our chicken broth. So we’re going to use four cups. And I have a two cup measuring cup here. And this is chicken broth. And I also want to tell you that when you if you don’t want to use ground and tag sausage, you can use ground chicken. So that’s two and this is four. And I got a little bit left in here. And this is a 32 oz. I’m just going to pour the rest in cuz it’s only just a little y’all. I ain’t going to save that little bit. So that little bit is not going to hurt. And now we’re going to stir this all together. Make sure that tomato paste get stirred in. Mix in there. And next we going to add in our beans. So this is like two cans. This is two cans of that 15.5 oz great northern beans. You want to drain and rinse them. So, we’re going to stir this all together. And if you feel like you need to add any more broth, it depends on you. You can add it or anything you want to. So, I’m going to let this simmer for about anywhere between six and seven minutes or until the carrots are tender. And you can put a lid on it if you want to. If you don’t, it’s up to you. After your five to seven minutes is up for your celery and your carrots and onions had got a little bit more tender, we’re going to add in that heavy whipping cream. Okay, that is a half a cup. And I’mma stir this in. Next, we’re going to add in our spinach. And I did use um two cups of baby leaf spinach. And I did when I washed them, before I washed them, I just smashed them in there. Just filled it up, you know, so it can have quite a bit in there. So, going to add in our spinach. And we’re going to stir the spinach in. And you want your spinach to get like wilted. This is some good tuskin white bean soup. And we going to let this like cook a little bit more longer, like five more extra minutes, and we will be done. And we’re going to come back. I’m going to put my lid back on. I did have my lid on. It’s up to you. And we’ll be coming back next to garnish it with some parsley. You can wait to garnish it. But guess what? I’m going to add me some my parsley flakes in now. This is that dried kind. And if you have the fresh kind, you can just put it on top later. Or you can even add a little more after you garnish it with. But I’m just going to add mine in. So it’s up to you. This Tuscin white bean soup is ready. Let me turn this heat off. [Music] Let’s get ready to get some soup. I got my favorite soup bowl. Look at that. And I remember that commercial from long time ago and the little girl asked her mom, “Is it soup yet?” Yes, it’s soup. Soup is ready. Put some broth in there. M delicious.
