
I'm gonna lose my mind. Making the condensed milk recipe for pumpkin pie from Bravetart (SE recipe attached). Couldn't weight it because my scale error'd out from it being too heavy? I've been simmering it for 2 hours and counting and it's reduced to…. more than 4 cups.
Everything is exactly as the recipe. I've been keeping it at simmering temp the whole time (between 180-210f). What gives?

Are you at high altitude? Simmering isn’t standard, and it sounds like you’re on the slow end of barely simmering either way.
I made this yesterday and it took mine somewhere between 1.5-2 hours. My stove sucks; I assume I didn’t have it hot enough.
Mine seemed to sit around 4 cups for a long time, and then reduced in half quicker after it broke the 4 cup barrier.

Omg, perfect timing, I am stirring this now, 30 mins in at 211 degrees, following for sure.
Update: 1:15 start to finish, the foaming towards the end helps for sure
Why not just buy condensed milk at that point?
Assuming you measured accurately, I think you probably took “simmer” too literally. Just keep it at medium the whole time, and as the notes at the end of the recipe say, turn up the heat if it’s not reducing fast enough. I’ve made her sweetened condensed milk a lot, and know that on my stove, medium is a little too low, so between medium and medium-high gets it done within the recommend time frame for me.
What altitude are you at?
I have made it a couple of times and it took much longer than 45 minutes. The first time I assumed it was because I was using 3 qt saucier instead of the 5 qt she mentions in the book. Got a 5 qt saucier and it still took forever, but it was so damn good.
