
When we were in Osaka, we ate at a traditional restaurant and the food was amazing. Everything tasted great, but besides the hijiki, I especially loved these pink pickles they served.
I tried to buy them in a supermarket while we were still in Japan, but had no luck.
Now that we’re back home, I’d really love to make them myself.
Can anyone help me identify them or share a recipe? That would be great!

Google shibazuke recipe. The pickles in the photo probably use food coloring so the homemade version wouldn’t be exactly the same color, though.

I love this stuff but didn’t know what it was called until now. (We just call it “purple pickle” in my house.) It should be available at your local Japanese grocery store or H mart if you have one. I haven’t tried to buy it online, but apparently it’s available from Hmart.
