Never thought it was capable of something like this. Definitely didn't think I'd ever document it. It was supposed to be an enchilada style layered dish. I forgot to buy enchilada sauce so I improvised. It weighs 5 lb. It felt wrong to put in the oven so I just added another half pound of cheese.
