Made pannetone for thanksgiving

This is my second batch of panettone. I made the first one a few days prior as a test batch with no paper molds. i used that to alter my technique and recipe, which produced some really great pannetone. i also candied my own peels, which was nice. i’m hoping to get my hands on some bergamot and yuzu so i can candy those too

these were so fucking fluffy, it was insane. i’m extremely proud of these and hope to make my next batch have bigger alveoli. i think im going to be making an unhealthy amount of pannetone this christmas season
