I understand it is not as hearty as Tonkotsu, but I really like how it is so light and balanced

Shio is #1 underrated ramen. It is very hard to find a good shio outside of Japan. Its so simple yet complex at the same time. They are usually fish forward as well so people will automatically disregard it.
