Instructions:
Place the couscous in a bowl.
Add olive oil, salt, and hot water.
Cover the bowl with a lid or plate and let it sit for 5 minutes.
After that, fluff the couscous with a fork to separate the grains.
Mix in the avocado, tomatoes, cucumber, olives, onion, and chickpeas. Drizzle a little more olive oil and add lemon juice if you like. Mix everything gently until well combined.
