    But then isn’t that technically just pulled pork ? It’s no longer a Ham, either Fresh or Cured and Smoked just curious. You just used a Fresh Ham instead of a Butt or Pernil. Loooooks freaking fantastic though.

    I get the whole pulling the bone out clean thing, but that usually means that it was overcooked. It’s very tender and I’m sure it’s delicious, but I like my meat to have at least enough texture and firmness that I have to chew it a bit
