
Kicked out at 16, I never really learned how to cook big meals for supper. So this is my first attempt at making a spaghetti sauce! Italian sausage, red peppers, garlic, carrot, celery, mushrooms, some spicesโฆ oh, and 5 lbs of beef. I even bought a pot just for the occasion. ๐ ๐คค

You should be proud; thats a fine looking meaty sauce you got there. And excellent choice on the carrots, cutting the acidity without adding sugar. The nice thing about tomato sauces and chilis is they get better over the short term, so leftovers are always awesome.
The other lovely thing about sauces it doesn’t take much to make a world class meal. Take that sauce you made, add a little vodka and cream? BOOM excellent vodka sauce. Or that leftover pasta water? Poor some of into a pan, add an ungodly amount of peccorino and fresh cracked pepper, and you’ve got a delightful cacio e pepe.
That’s the alchemy of cooking, bud. Humble components to wonderful moments. Corny as hell. But true.

YUM! Sauce like this freezes so well! I like to do individual servings in freezer bags (or cup cubes!). Super easy quick hearty homemade meal on the fly!
