I make a massive 50qt batch of chicken stock a few times a year and freeze it. It blows away anything from the store. Super rich, silky, and full of collagen because I include 12 chicken feet in the pot. Here is the full recipe.
Ingredients
• 8 whole rotisserie chicken carcasses or any mix of bones you have
• 12 chicken feet cleaned and trimmed
• 6 large onions quartered
• 8 large carrots rough chopped
• 8 celery stalks rough chopped
• 2 full bulbs garlic sliced in half
• 2 bay leaves
• 1 tablespoon whole black peppercorns
• 1 bunch parsley
• 1 bunch thyme
• Water to fill a 50qt stock pot
Simmer for 6-8 hours

Yes, I love this. Definitely appropriate for ushering in winter
This is why I have a pressure canner
This is amazing! Never tried chicken feet but I bet there’s a ton of collagen in there. (Random aside, I like to add fresh jalapeño to mine for a little kick)
I did the EXACT same thing a few weeks back! So good!
Looks good
I feel like you should be doing 16 chicken feet with your 8 rotisserie chickens….
