Isn’t that more of a sashimi or maybe even crudo? Might be just me, but when I had to make carpaccio, or at least things called that, it usually involved smashing/flattening a piece of raw tenderloin from various mammals but usually beef. Hey different strokes for different folks, people call all sorts of things goulash depending where you were born and raised.

Carpaccio is much much thinner. That’s sashimi.
