  1. We had 20 ppl come over and we had other foods so we had 1 rack left over.

    Used weber extender for space and there were about 10 degree internal temp difference between top and bottom after 3 hours in. I rotated them when I wrapped. I had 3 racks ready first by temp so I pulled them out and waited another 1 hr for the other 3.

    Used butcher paper instead of aluminum foil like I usually do and this time, i didn’t put ACV in because fat oil was sipping through but they didn’t come out as tender so I will go back to using foil. Or maybe try unwrapped with abundant spritzing.
