Perfect Pasta & Gelato is now open on Main Street in Bay Shore, bringing a build-your-own pasta concept its owners say Long Island has been missing.
The new shop — located in the former Kismet Coffee Co. space — pairs fresh, customizable pastas with gelato, espresso drinks and classic Italian desserts. It’s also connected to Fire Island Vines through an interior doorway, offering overflow seating when events aren’t scheduled.
The business soft-opened Oct. 8 with coffee and desserts. Pasta officially debuted Nov. 10, ahead of its grand opening on Nov. 16.

A “Chipotle for pasta”

The concept comes from Road Trip owner Phil Krumpter, who got the idea after visiting a small to-go pasta spot on a recent trip.
“It’s basically a Chipotle for pasta,” Krumpter told Greater Long Island. “You pick a pasta, a sauce, a vegetable, a protein and a cheese.”
All pastas and sauces are made fresh using ingredients imported from Italy. Krumpter said he also wanted to keep pricing approachable.
“You can get a pasta with chicken for $15.99… This exact same pasta would be $35 in an Italian restaurant,” he said.
How it works
Guests assemble their pasta Chipotle-style:
Pick your pasta
Pick your sauce
Pick your vegetables
Pick your protein
Pick your cheese
The concept is primarily to-go, but guests can sit inside Fire Island Vines when the space is available.
More than pasta

Managing partner Samantha Magadan leads the coffee, dessert and gelato program — and the gelato comes with sentimental roots.
“I grew up making gelato with my old boss in Massapequa,” she said. “Our gelato today is actually the gelato I used to make when I was 15.”
The menu features rotating gelato flavors, affogatos, cake lattes topped with actual slices of cake, homemade tiramisu and rainbow cookie cake, cannolis, olive oil cake and even house-made puppy gelato.
