Chef Ludo Lefebvre’s Petit Trois will debut in Aspen this winter.

Chef Ludo Lefebvre’s acclaimed French bistro, Petit Trois, will debut its newest location and first restaurant outside of Los Angeles at the MOLLIE Aspen hotel this winter.
The bistro, which is the third location for Petit Trois and Chef Ludo Lefebvre, is set to open early December 2025, according to a press release.
“We couldn’t be more excited to welcome Petit Trois to MOLLIE,” Michael Brown, co-owner of MOLLIE Aspen, said in the release. “Chef Ludo’s thoughtful and elevated approach to food and hospitality reflects the values we’ve woven into MOLLIE. This partnership brings vibrant new culinary energy to Aspen that we’re excited to share with the community and our guests.”
Petit Trois will offer breakfast, lunch, and dinner in MOLLIE Aspen’s full-service dining room, lounge, and bar. Signature menu dishes include Steak Frites, Burgundy Escargots, French Onion Soup, and the Big Mec, a burger once named the best in America.
“The menu will stay true to Petit Trois’ core, with a blend of bistro classics and modern dishes driven by local ingredients to connect guests with the surrounding Aspen landscape,” the press release states.
There will be an extensive wine list curated by Chef Ludo’s partners, Master Sommeliers, and The Little Nell alums Dustin Wilson and Sabato Sagaria, focusing primarily on French and California wines. There will be an emphasis on by-the-glass selections from top producers.
Petit Trois will also feature an updated, cozy, bistro-style design in its newest location.
Chef Ludo has over 12 years of training under culinary icons in France, and has earned accolades including a Michelin Star, Relais & Châteaux’s World’s 50 Greatest Chefs, and James Beard Award nominations.
“Colorado and Aspen both hold special places in my heart,” Chef Ludo Lefebvre said in the release. “Partnering with the team at MOLLIE to bring Petit Trois to one of my favorite towns is a dream come true. I have spent summers and winters in Aspen and love that it offers something for everybody year-round. I am looking forward to adding my culinary stamp on the town.”
Petit Trois currently has two locations in Los Angeles and will expand to Mexico in 2026.
