It’s hard to get tired of zucchini bread, but sometimes you want a savory way to use up your abundance of zucchini. These zucchini fritters are our go-to. Start by shredding zucchini and squeeze out the excess moisture to ensure crispiness. Next, we saute onion, garlic, and shredded zucchini seasoned with salt and pepper, which gives them all a slightly sweet caramelized flavor and also removes the excess moisture. Add in some chopped greens for extra nutrition. Then, we make a chickpea flour and water mixture, which acts as the egg-free binder. Add in cooked quinoa seasoned with salt and fresh dill and give it a stir. Then add the chickpea egg and either a gluten-free flour blend or allpurpose flour if you’re not gluten-free. Pan fry in a little oil until your fritters are crispy and golden on both sides. Then top with your favorite sauce and enjoy, friends.
