
A very special tin from Wildfish Cannery.
Pink Scallops in brine.
This bad boy is a hard one to find, so I have been holding onto it for sometime.
What an interesting tin, beneath the murky brine waa hiding several Alaskan native pink scallops.
Pink scallops are meant to be eaten whole, not just the typical abductor muscle we are all used to. This particular can was full of beautifully harvested scallops with big gonads(roe in this case).
What a simple and gorgeous flavor. The mouth feel, like an ocean pate on top of that very typical scallop flavor. Although I would say pink scallops are less sweet in terms of what I'm used to in scallops. The flavors and the texture, slightly reminded me of an oyster for a split second which I found qute interesting overall.
These may look intimidating, they were delicous. If I get the chance to indulge in these again, I think I will make something with them and utilize that beautiful brine packed with a ton of flavor, essentially a scallop broth.

Why do you have so many tins? Are you trying to artificially pump up the costs on the secondary market? The smell a conspiracy.
Nice! So are these smoked or cooked or anything before canning or are these just pickled raw?
