


The cloudy sky is an angry steel gray, it's drizzling a freezing cold rain just this shy of sleet… definitely calls for a spicy hot stew!
I had some frozen oysters I needed to use, so I used this recipe from the Phaidon Korea cookbook as a base, replacing the clams and shrimp with my oysters and adding some quickly cooked noodles.
Oysters, soft tofu, and a lovely light and spicy broth = excellent rainy day soup!
I felt like it needed a little more complexity, so I added some kimchi and stirred it in and the extra hint of sour flavor was PERFECT.
