

Recipes in comments. We went with NY style cheesecake thinking it would hold up all the weight a little better. I used thick straws to help stabilize but I'm not so sure I needed them. I didn't feel like making the buttercream thick enough to cover the whole pie crust so it has a skirt of crust sticking out. Next time I would figure out how to do a pie with vertical sides. I was skeptical of this dessert because it took so much work but it was a special request so I went with it. It turned out way better than I thought, I would actually make it again. Only problem is that with 10 people we only got through half of it.

I made one (with pecan pie, but I love your idea of cheesecake!) but I made the pies using the same cake pan that I made the spice cake in. I made all the parts using recipes from Sally’s Baking Addiction website and lined the cake pan with parchment so I could pull the pie out using the overhanging parchment. I also followed instructions from Zac Young to cut off the sides of the pies leaving only the pie and the bottom crust.
