I was gifted these awhile ago and just thawed them from my freezer. Any idea what cut this is and any tips on how to cook them? TYIA!

    They’re either a tenderloin end or parts of a deer heart.

    Beef tenderloin-great steak. Brush lightly with olive oil and then heavy salt/pepper. Let them come up to room temp and then sear on all sides in hot skillet (cast iron if you have it). Transfer to oven (375) until 135-140 degrees in the middle. Take them out of skillet straight to cutting board and let them rest 10 minutes and enjoy. Toss in a cpl pats of butter when you put them in the oven and flip them once (pro tip). Shouldn’t take more than 2-4 minutes in oven at that size.

  4. End caps on a tenderloin. Cut into thinner disks, sear quickly on both sides then finish slowly at lower temp to your desired doneness with lots of butter and herbs of your choosing. Enjoy!

    These are really shittily cut filets. The head and and ear off the whole tenderloin. I’d make a classic beef stroganof with these.

    Almost looks frankenmeat. Looks like some cut from the loin, possibly the ends(especially the bottom one).
