**RECIPE** Lebanon: Manousheh (Lebanese Flat Bread)! – A traditional Lebanese bread that looks like a pizza! #Manousheh is covered in a za’atar and sumac paste that many swear strengthens the immune system and reduces inflammation. We topped it with a healthy #fattoush salad full of cucumbers, tomatoes, parsley, lemon olive oil and feta cheese. I made this one with my childhood friend, Michele, whose family is from Lebanon. #healthyfood

Key ingredients include bread flour, all-purpose flour, olive oil, yeast, sugar, and salt. The paste includes za’atar, sumac, more olive oil, and salt.
**Fattoush salad toppings include romaine lettuce, tomatoes, cucumber, and parsley or mint mixed with a dressing of olive oil, lemon juice, garlic, and salt. We also added some olives and feta cheese.

** This recipes makes up to 15 flatbreads.
1. Make the flat bread dough. Sift together bread flour (1 ½ cups), all-purpose flour (3 cups) and salt (~2 TSPs). In a separate bowl, combine dry active yeast (2 packets Or 4 TSPs) with warm water (2 cups) and sugar (2 ¼ TSPs). Wait until the yeast is frothy/bubbling and then add it to the flour. Drizzle in olive oil (2 TBSP). Knead for 10 minutes, make a ball, and place in a bowl (covered) to rise for a minimum of 2 hours. Later divide the dough into 10 – 15 balls. We covered and kept the dough balls in the refrigerator until ready to use.
2. Make the za’atar paste. Combine za’atar (1/2 cup) with sumac (2 TSP), olive oil (3/4 cup), and salt (1/2 TSP).
3. Grill the flat bread. Roll out or stretch the flatbread onto a pizza stone. If you are worried about it sticking put the dough on parchment paper on a pizza peel. Pull the parchment out after it starts cooking. Grill the flatbread at 400 degrees F for ~ 10 minutes or until it is a golden-brown color. Drizzle the paste halfway through the cooking process. This flat bread can also be made in the oven.
4. Toppings. We topped with a Fattoush salad, feta cheese, and olives. Drizzle with olive oil.

My grandfather was born in Lebanon and came over to the United States in the early 1900s and really rooted our family in Lebanese tradition. It’s cosmic food Lebanon. Get ready. We’re making minutia. A traditional Lebanese flatbread mini swear boosts the immune system. Let’s make our dough. Sift together allpurpose and bread flowers and sprinkle in salt. In a separate bowl, add water to dry active yeast and sugar. Wait until it is frothy and bubbling and add it to the flour mixture. Add olive oil and knead the dough for 10 minutes forming a ball. Let it rise for 2 hours. Next, our zitar paste. Combine olive oil, salt, sumac, and zatar. Roll the dough, place it on parchment, and grill it at 400°. After 5 minutes, add the zatar paste and grill for another 5 minutes for 10 total. We topped our flatbread with a fetouch salad full of cucumbers, tomatoes, parsley, and we added feta or halumi. Reviews, it’s delicious with the zitar, and we added the fetouch salad on top with the feta, and it’s absolutely amazing flavor. Yum. Lebanese cuisine. As around the world we go, it’s cosmic food.
