Mozzarella has so little flavour this is just an unmelted rubber sandwich.

Mozzarella is too tasteless by itself but it’s got great melting properties.. A melted Caprese is pretty damn good.

You gotta do a lid right when you put it on, then take the lid off when you flip, perfectly melted steamy cheese, but still crispy, just don’t put a lid on when there’s a grilled side facing up or you’ll lose your crisp.
