I just made stroganoff tonight before seeing this! I opted for soy curls soaked in vegan beef stock as the protein, but may in future try this recipe and use Impossible/Beyond beef. I normally avoid fake meat because the taste seems too real and weirds me out, but with such a simple recipe and a lot of creaminess to fight through, I wonder if more flavor from plant-based beef could be worth it. Thanks for sharing!
