It always feels really special when I get to eat clams or pippies as we call them in Australia. And one of my favorite ways to prepare them is in a garlic butter sauce. I firstly want to drop my pippies into some cold water so they can purge any sand that they may have contained in their shells. Leave them to sit while you finally chop two large chilies. Mint six garlic cloves and finely chop some parsley. Give the pippies a drain once you have prepared everything for the sauce. Now, this sauce comes together so quickly. Melt some butter in a hot pan with a drizzle of olive oil and quickly fry off the garlic and chili. Add about a cup of white wine and then add the pippies to the pan. Cover and leave to steam for around 5 minutes or until all their shells open. Finish off with a sprinkling of parsley and a big squeeze of lemon. You can serve this with some crusty white bread, but I just love to eat them on their own and then drink the broth straight out of the bowl.
