Halloween is in a couple of days, so if you want something spooky and tasty, you need to make these stuffed peppers. Start by removing the seeds from the peppers. Carve out some eyes and a mouth. Dice some chicken breast into small chunks. Then get some oil into your pan. Add the chicken. Let this cook for 5 minutes. Add some salt, black pepper, cajun seasoning, tomato paste. Then show some garlic a great time. Cook for 30 seconds. Add a splash of water. Lots of cream cheese. Scrape all the flavor off the bottom of the pan. Add some cooked rice, spring onion, and spinach. Make sure it’s all fully combined. Stuff the peppers. Top with cheese. Then roast in the oven at 180° C for about 25 minutes. Once they’re ready, they should look like this. Pop the lid on top. And there you have some spooky stuffed peppers. That is absolutely banging.

  1. Ingredients (2 servings):
    300g chicken breast
    3 large peppers
    150g cooked rice
    2 tbsp cream cheese
    1 tbsp tomato puree
    2 garlic cloves
    1 spring onion
    Spinach
    1 tsp Cajun seasoning
    45g cheddar cheese
    Salt
    Black pepper

    Method:
    1. Dice the chicken breast into small cubes, then cook in a frying pan with a little oil for 5 minutes.
    2. Add the Cajun, grated garlic, salt, black pepper and tomato paste. Cook for 1 minute.
    3. Add a splash of water and the cream cheese, then mix. Then add the cooked rice, sliced spring onions and spinach. Stir until combined.
    4. Slice the top off the peppers, remove the seeds and carve a face into one side of each pepper.
    5. Stuff the peppers with the chicken and rice mixture, then top with grated cheese. Place onto an oven tray, along with the tops of the peppers, and cook in the oven at 180 degrees celcius for 25 minutes.
    6. Once the peppers have softened and the cheese is golden and bubbling, you’re ready to serve and enjoy. Lovely!

    Diced chicken breast only takes like 5-8 mins on the stovetop to be cooked

  5. Ohhh, never seen them done this way, the carved faces in the bell peppers is absolute class. May I suggest you try a Spanish style version which is: browned off chorizo (diced or crumbled), then add diced onions, paprika, black pepper, salt, a small handful of cherry tomatoes (cooked) shredded chicken thighs. Part boil the rice before finishing boiling in chicken stock. Combine them inside hollowd out bell peppers before roasting gently in the oven
