
I first chop the aromatics in my cooking robot, saute it with oil and curry paste. I add in mushroom stock, lemongrass and lime leaves and stew chicken in it for 30mins. After that, I mixed the flavourful gravy with coconut milk and cook it with rice and pandan leaves. Leftover gravy is spooned over the rice. The rice is very very flavourful and taste very similar to biryani. Especially when it's paired with tzatziki.
