Asparagus, eggs, truffle is one of life’s natural marriages. It’s not a divorce of ingredients. And how many times do you sit there and have peculiar food on a plate? Ingredients that don’t work with each other for the sake of being clever. It’s called divorce in an emotional world and a gastronomic world. Again, not too fine. Don’t worry if it splashes on the side of the plate. Who cares? It’s about food. It’s about eating. It’s about indulging. It’s about living life. It’s not about being prissy and fussy and boring. Now, and be generous. Always serve a jug on the side. Life’s too short for small portions. Now, let’s take the egg. Just feast. Feast. Feast. Feast. Now, allow gravity to dictate. And there we have it. Asparagus with truffle mayonnaise, vinegarette, and chopped eggs in less than 30 minutes. Now that’s eating. That’s indulging. That’s life.

  6. I discovered that I am the same age as Marco by a couple months. Now when I watch his videos I imagine talking in such a theatrical way in my daily life. One day I may just be brave enough to give it a try…
