Looking for mole enchiladas like the ones I had in Austin

Photo from the restaurant's google reviews attached. Key component is that they're smothered in melted cheese, so you have a bite of cheese, mole, chicken, enchilada, and ideally beans/rice all in one and it's all delicious.

Price isn't super important but it shouldn't taste/look high-end. I can travel a bit, if its closest equivalent is e.g. on Bergenline I can go to Bergenline
