


Hasselback Seitan Kielbasa with edible vegan casings. The casings are made of water, vegetable glycerin, and starches.
Will be preparing an order for 25 pounds of seitan Kielbasa for a client.
Here's my recipe:
25 pounds of uncooked seitan pork at a 70 to 30 percent lean-to-fat ratio.
Spices:
7 oz salt
2 oz black pepper
1/2 oz mustard seed
1/2 oz pickling spice
7 oz brown sugar
1/4 oz marjoram
3/4 oz garlic powder
2 T liquid smoke
Mix spices with raw seitan, extrude into casings, tie, wrap, and steam for 30 minutes. Allow to cool and place in the refrigerator for 2 days.
