Panforte

This is a traditional Italian Christmas treat – originally from Siena in Tuscany. It is said that there should be 17 ingredients as that is how many wards there are in the old city.

INGREDIENTS
100g almonds
100g pistachios
100g hazelnuts
240g plain flour
60g cacoa powder
2 tsp cinnamon
½ tsp ground cloves
½ tsp ground nutmeg
¼ tsp ground cardamom
½ tsp salt
½ tsp ground black pepper
200g mixed peel
100g dried figs (chopped)
1 orange (zest only)
250g honey
175g caster sugar
1 tbsp icing sugar
 
Preheat the oven to 180ºc. Spread out the almonds, pistachios and hazelnuts on an oven tray lined with baking parchment and bake for 10 minutes. Turn off the heat and leave the nuts in the warm oven.
 
Sift the flour, cacoa powder, spices, salt and pepper into a bowl and then stir in the mixed peel, figs, orange zest and warm nuts. Transfer to a 20cm diameter cake tin, lined with baking parchment and greased with oil.
 
Heat the honey and caster sugar in a saucepan until it starts to bubble. Pour into the cake tin, mix and flatten the surface (use an oiled spatula).
 
Preheat the oven to 160ºc. Bake for 30 minutes then leave to set for 2 days before removing from the tin, dusting with icing sugar and slicing into segments.
