    Crust:
    – 200 g all-purpose flour
    – 100 g cold butter
    – 60 g sugar
    – 1 egg white
    – A pinch of salt
    – Vanilla (optional)

    Filling:
    – 250 g ricotta cheese
    – 50 g sugar
    – 1 egg yolk
    – Lemon zest or vanilla, to taste
