But I thought I’d try roasting tomatoes and peppers to make my own version. And I have to say, it’s pretty unbeatable. To serve with it, I’m making these luscious cheese and tomato swirl buns with some of the roasted veg. And not only has the whole house filled with that intense Mediterranean aroma of roasting herbs and vegetables, but it’s combined with baking bread, and I’m in soup heaven. It’s like I’ve created a bowl of comfort, the soup equivalent of a hug. Plus, the wonderful orange color is bound to brighten up even the glooiest of days.
