Mix these in a bowl:
165g flat starter
400g water
650g bread flour
15g salt

Stretch and pull 3 times, 45 min apart
Bulk ferment on counter, covered. Did almost 15 hours because we keep the house cold.
Shape- envelope fold and tuck
Rest one hour on counter covered
Shape once more, envelope fold and tuck
Preheat oven to 450, warm Dutch oven in the process (I let mine warm for 15ish min)
Place bread on parchment and then into Dutch oven
On the outside of the paper, inside the Dutch oven, I add one ice cube
Place bread into hot oven with lid on, set timer for 50 min
Once timer goes off, uncover for 5-10 min until the top is browned

    **EDIT** starter was not flat, it was re-fed. That’s what I get for copy-pasting an old recipe and editing it.

    Gives me hope. I just pulled my starter from the back of the fridge and i can’t remember when i last fed it.

    Did you not feed it during that time? Curious to long it can go in the fridge without being fed. Also when in the fridge even just for a few days do you lightly put lid in or tightly?
