Quick and easy! Made enough for two

Half yellow onion chopped
3 – garlic cloves chopped
Pinch of salt, some cracked pepper, and pinch red pepper flakes
1table spoon tomato paste
1/4 cup vodka
1/3 cup vegan heavy cream
1/4 water to thin or go without
Oil

Directions
Make the penne and try to get close to al dente. Didn’t keep track of mine but about 5 – 8mins of boiling then strain and rinse with cold water to freeze the cooking. (I made 1cup of dried penne)

Sauce
Cook up the onions with some oil or butter and then add the garlic 2-3 min then add seasoning then mix in paste.

Add vodka and cook about another 2-3 min until alcohol is removed. Then add cream and mix until it looks orange and no white color. If it is too thick add the water or broth to give more liquidity.

Add in pasta and mix. Can add parsley on plate to look cool
