That's the shittest way to peel a prawn. Remove the head, then all the legs. Remove the top 3 large segments of shell then squeeze the tail gently and pull out the entire body of meat. No wastage at all

In Italy we usually eat prawns using a fork and a knife. It is easy enough and a cleaner way to eat them. Also, these prawns look extremely dry, probably done on purpose. But had they been cooked in any other way they would most likely have some fumet inside. In this case we would have seen a stream of fumet slip from his hands to his wrists and cuffs…
