Broccoli Rabe Sausage Bake
Total Prep: 20 minutes
Makes: 4 servings
Ingredients:
• 4 chicken or turkey sausages
• 1 Tbsp olive oil
• 1 large onion, chopped
• 1 bunch of broccoli rabe, washed and cut into bite size pieces
• 3-4 cloves of garlic, chopped
• 2 cups cherry tomatoes, sliced in half
• 1 cup shredded parmesan cheese, or whatever cheese you prefer
Breadcrumb crust
• ¼ cup panko breadcrumbs
• 1 teaspoon olive oil
• 2 garlic cloves, minced
Directions:
1. Cook sausage according to package directions, slice and set aside.
2. Meanwhile bring a large pot of water to a boil. Add a teaspoon of salt to the water.
3. Add the broccoli rabe and cook for about 2-3 minutes, drain and set aside.
4. In a large skillet, heat olive oil over low-medium heat, add the onion and cook until caramelized, about 10-15 minutes. Now add the garlic and cook for an additional minute.
5. Add the tomatoes, cook for two minutes, then add the broccoli rabe and sausage, toss gently.
6. Combine panko, olive oil and garlic. Sprinkle over broccoli followed by parmesan cheese. Place under the broiler until melted and browned. Enjoy!
