    I’m a huge fan as well. It’s the simplest cook and comes out so well. It feels like cheating!!!. I wish I found this ages ago. I run it on the slicer after it cools and freeze small portions. It’s the best sandwich meat. Some I’ll serve cold like deli roast beef. Some I’ll package to reheat in the sous vide and serve warm like an Arby’s sandwich but way better and cheaper.

    Don’t want to s*#t on the sous vide parade but….I just got an instantpot and did eye of round in less than an hour. It was just as good as my 24 hour sous vide of the same cut. I’ll continue to do sous vide, but for eye of round it’s Instantpot. Pit sandwiches in less than two hours….can’t beat that.

    That’s a really lean cut – does it dry out at all? What would you compare it to?

    Also, why did you sear the inside?

    Dude the 24h eye of round is THE BEST

    So far, probably the best cheap-ish beef cut I’ve done in the machine. Sooo tender
