For the Crispy Potato Base:

2.5 lbs / 1.2 kg potatoes (Yukon Gold or similar)
Olive oil (for coating)
Salt & Garlic powder
~1/4 cup / 50 ml melted butter
~1 oz / 30 g grated Parmesan
For the Savory Meat Filling:

7 oz / 200 g mushrooms
1 onion, diced
1.1 lbs / 500 g Ground pork & beef mix
3-4 cloves of garlic, minced
2 tbsp tomato paste
1 tsp smoked paprika
1/2 tsp dried thyme
Cayenne pepper, to taste
1 tbsp soy sauce
1/2 tsp balsamic vinegar
1/2 tsp sugar
~3/4 cup / 200 ml hot water
Salt & pepper
For the Quick Slaw:

7-10 oz / 200-300 g cabbage, thinly slice
1 carrot, shredded
1 small onion, sliced (optional)
1 sweet-tart apple, chopped
3 tbsp olive oil
1 tbsp rice vinegar
1 tsp honey
1 tsp Dijon mustard
A mix of seeds and nuts (for topping)
Salt & pepper to taste
For Topping:

3.5 oz / 100 g Cheddar cheese, shredded
3.5 oz / 100 g Mozzarella cheese, shredded
Dried oregano (optional)

Hello, everyone! Welcome to YumCult❤️. Today, we’re making the ultimate Potato Pie Cozy, hearty, and incredibly delicious. Let’s get started! 2.5 lbs / 1.2 kg potatoes (Yukon Gold or similar). Cut in half and place in a baking dish. Coat with olive oil Season with salt & garlic powder. Mix well to coat Arrange cut-side down. Bake at 400°F / 200°C for 40-45 minutes. Break it up and cook until browned. Mince 3-4 cloves of garlic. Add to the pan and cook for a minute. 2 tbsp tomato paste. 1 tsp smoked paprika. Cayenne pepper, to taste. 1/2 tsp dried thyme. Stir and cook for another minute. ~3/4 cup / 200 ml hot water. 1 tbsp soy sauce. 1/2 tsp balsamic vinegar. 1/2 tsp sugar. Stir well, then cover and simmer for 5-7 minutes until the sauce thickens. The potatoes are ready! (A knife should go in easily). Smash them flat A glass bottom works perfectly for this! Сombine: ~1/4 cup / 50 ml melted butter ~1 oz / 30 g grated Parmesan. Brush the mixture over the potato base. Back into the oven for 15-20 minutes until crisp. Taste and add more salt if needed. Set the filling aside. The perfect crispy base! Spread the meat filling evenly. Shred: 3.5 oz / 100 g Cheddar 3.5 oz / 100 g Mozzarella. Now add the mushrooms we prepared earlier. A sprinkle of oregano (optional). Bake for another 10-15 minutes. While that finishes, a quick, fresh slaw. Thinly slice: 7-10 oz / 200-300 g cabbage. Shred 1 carrot. Slice 1 small onion (optional). Peel and chop 1 sweet-tart apple. Look at that! Golden and perfect. Let it cool down for a few minutes Then carefully remove from the pan. Transfer to a cooling rack. 1 tbsp rice vinegar. 3 tbsp olive oil. 1 tsp honey. 1 tsp Dijon mustard. Salt & pepper to taste. Give it a good mix! Feel free to add more salt, oil, or vinegar to make it perfect for you. Let it rest for 10-15 minutes. This will soften the cabbage and mellow the onion. Lightly toast a mix of seeds and nuts for extra crunch. The perfect balance of textures and flavors Crispy potatoes, rich filling, and a fresh, crunchy slaw. This is pure comfort food.   3. I like the idea, but it seems that the ground meet would be far overcooked before it even went into the pie. I’ll try it, but will cook the beef for a shorter length of time.
