600g / 1,2lbs of chicken breast cubed and season with salt, pepper, paprika, garlic to your liking. For the brine take about 1 tablespoon of Sesame and Peanut oil, a splash of dark soy sauce and about 200g / 0.44lbs of greek yoghurt. If you like chili add 2 teaspoons of lao gan ma. Let it brine overnight.

I just used full grain spaghetti but any will do. About half a pound uncooked or 225 grams.

Put the chicken WITH the brine into a hot pan and just fully cook it through, then add some heavy cream (200g / 0.44lbs) and just a bit of broth. While thats cooking stir and add pecorino and boil your noodles. Once the noodles are fully boiled put them into the pan with the chicken sauce. Then serve with some herbs on top
