

This was a recipe for 2 loaves:
200g starter
700g water
900g ap flower
100g rye flower
20g salt
4 rounds of stretch and folds
4 hours of bulk fermentation
12 hours of cold fermentation
Baked at 500 for 20 minutes lid on
450 for 15 minutes lid off
It’s very good!
